At first glance, the Château de Bazoches would not necessarily get a military buff’s pulse racing. This grand Burgundian château dates back to the 12th century, when it was first built on the site of an old Roman outpost looking over the Morvan hills. Its elegant interiors are largely preserved from the17th century, reflecting the tastes of King Louis XIV’s refined courtiers. However, its most famous owner was far from an aestheticist.
The beauty of a hotel barge cruise with European Waterways is that it can be as active – or as relaxing – as the guest wishes to make it. One such recipe is Le Gigot d’Agneau, a succulent roasted leg of new season lamb, largely regarded as a symbol of Spring.

On one of our voyages along the historic canals of France, you may be lucky enough to be on board a hotel barge that traverses one of the country’s aqueducts. France is a country of undulating landscapes, criss-crossed with innumerable waterways, so the resourceful French engineers in earlier centuries had little choice but to build a number of aqueducts.

If there is one dish that is immediately identified as being Scottish, it is haggis. Contrary to an old yarn, haggis is not a wild animal indigenous to Scotland. It is a spicy mix of sheeps liver and heart, oatmeal, and spices boiled inside a sheeps paunch.

Cut the salt pork into strips and sauté for about 5 minutes until lightly brown. Remove the strips from the frying pan, leaving enough rendered fat to coat the pan. Cut the beef into 2-3" chunks and season with salt and pepper. Fry the chunks in the rendered fat, being careful not to crowd the pieces. Brown the chunks until well crusted on all sides. Remove browned meat to casserole.
